Every time people go on lentil binges on Groupthink....I end up following suit. I'm so susceptible to suggestion!

So I decided today was the day to try lentil loaf for the first time. Unable to find a recipe that was lazy enough for me...I made one up! It is vegan and gluten free.

1 cup red lentils + 2.5 cups water + 2 Tbsp no-chicken bouillon, cook until lentils are done

6 oz. (about half the bag, because that was what was left) of dry, gluten-free falafel mix (I use Ziyad brand)

A bunch of kale leaves + 1/3 yellow onion + 3 tiny cloves of garlic, into the food processor and pulsed until everything is chopped

3 Tbsp of ground flax seed + 6 Tbsp of water, mixed up and let sit for about five minutes to get goopy (If you dont have ground flax seed and you're not a vegan, feel free to use 2 eggs here).

After the lentils cooked, I added the falafel mix, the kale mix, and the flax mix right into the pot the lentils cooked in. I stirred and let it sit, because usually the falafel mix needs to sit with water for 20-30 minutes. The mixture got too dry, so I added about 1/2 cup extra water and mixed again. After letting it sit for about..15-20 minutes total, I spooned it into a greased loaf pan and it is now cooking in the oven at 400F.

I'm so hungry and excited! I can't wait to let you all know how it turns out!

P.S. - I also made rainbow sprinkle peanut butter this morning for the first time. It's as delicious as you'd expect.
