PARSNIPS. Tonight, I have discovered parsnips. I wish I had about 12 more pounds of them because these fuckers are DELICIOUS. Peel 'em, cut 'em into sticks the size of your pinkie, and huck 'em in a pan with hot ghee (or butter). Sprinkle with a little nutmeg, toss 'em around, then cover and cook on medium heat until they turn all goldeny. You'll have to stir them a couple of times. Then, pour in about 1/8 cup of water and cover again, until all the water is absorbed/evaporated/whatever magic happens. Season with salt and pepper and prepare to have your mind blown.
