What's for lunch, kids?

Just look at how awesome that is.

We're having fancy lunch today because it's Date Night, which means a lot of sexing, which is a bit more fun when you're not just full up on a shit ton of pasta.

What are y'all eating?

8 slices bacon

2 slices bread

1 — 2 C. Pecorino Romano

salt/pepper

2 Lg. Eggs

1 C. evaporated milk

5 1/4 C. Water

3 minced Garlic cloves

1 C. white wine

1 lb. penne

Cook the bacon in large skillet until crisp; drain. Reserve 2 T. of bacon fat and add to food processor, along with 1/4 of the crisp bacon, bread, 1/4 C. cheese, and pepper. Process until coarse.

Meanwhile, whisk eggs with milk, remaining cheese, and 3/4 C. water in a bowl. Heat your broiler and move rack to middle-high.

In skillet, return fat to heat, add garlic and pepper, to taste. Just saute until fragrant, about 30 seconds. Stir in wine, then reduce to about 1/4 C, about 3 minutes. Stir in remaining water, penne, salt, and bring to a boil. Reduce back to medium and cover, simmer for 15 — 20 minutes, until pasta is al dente and most of the liquid is absorbed. Remove from heat and add in remaining bacon, cheese mixture, and combine well. Top with crumb mix and broil until golden brown, about 2 minutes.
